Instructions
Step 1
Feed the mother once a week with 1/4 cup warm water and 1/2 cup flour, and afterward leave it out all day or overnight.
Step 2
The night before baking, put 4 cups of flour in a large bowl and mix in 1 tsp salt. Make a well and add 2 Tbsp of olive oil.
Step 3
In a separate bowl, add 1 1/2 cups warm water and 2 Tbsp honey to the starter (3/4 cup).
Step 4
Combine the two bowls and mix.
Step 5
Empty mixture in an oiled bowl and cover with plastic wrap and a tea towel and leave to rise overnight.
Step 6
Day of: flatten on floured surface. Fold in half and pinch. Fold again to form a ball. Cover and let rise for 2 hours.
Step 7
Line Dutch Oven with parchment paper and bake bread at 425°F for 30 minutes with lid, then reduce to 400°F and bake without lid for a further 25 min.
