Keto Tomato-Braised Pot Roast with "Potatoes"

Simple recipe that can be used to tenderize cheaper cuts of meat and make it delicious. I did not add any salt, because the tomato sauce and beef base already have it, but add salt to taste.

Step 1
rub the roast on all sides with olive oil, then press the cracked black pepper, italian seasoning, and minced garlic into top and bottom of roast
Step 2
Mix the apple cider vinegar into the tomato sauce
Step 3
place the roast in the bottom of the crockpot, and cover with the tomato sauce mixture.
Step 4
Add the beef base in a blob on top of the roast, sprinkle with spring onions, and add the bay leaf to the tomato sauce around the sides. DO NOT ADD THE CAULIFLOWER YET
Step 5
Cook on high for 5 hours
Step 6
scrape the beef base off the top into the tomato sauce and mix in. baste the roast with the tomato sauce. add the cauliflower, making sure to press it into the sauce. Cook 1 more hour.
