Instructions

Step 1
Brown ground beef in a skillet. Drain excess grease if needed.
Step 2
Add beef, chopped zucchini, bell peppers, onion, carrots, and cabbage to the crockpot.
Step 3
Stir in tomato paste, garlic powder, cumin, chili powder, coconut aminos, and beef broth.
Step 4
Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Step 5
Add spinach and cauliflower rice during the last 30–45 minutes.
Step 6
Stir in pinto beans if using. Adjust seasoning to taste before serving.
