Instructions
Step 1
Preheat oven to 350°F; line a baking sheet with parchment paper.
Step 2
Heat olive oil in a skillet over medium heat. Sauté green onions for 1–2 minutes. Add spinach and cook until wilted; season and cool slightly.
Step 3
In a large bowl, whisk eggs. Stir in spinach mixture, almond flour, baking powder, and feta.
Step 4
Shape into 6 biscuit-sized rounds and place on the baking sheet.
Step 5
Bake 20–25 minutes, until golden.
Step 6
Cool slightly before serving.
