6 cupspeaches
peeled & sliced into bite-sized pieces

1 cupbrown sugar

¼ cuptapioca

2 Tbspflour

½ Tbspcinnamon

Instructions
Step 1
Preheat the oven to 350°.
Step 2
Lightly grease or butter an 8x8 or 9x9 baking dish.
Step 3
In a large bowl, mix together the brown sugar, tapioca, flour, and cinnamon. Have this ready as you begin to cut the peaches.
Step 4
Skin the peaches, then cut them into bite-sized pieces. Slice them right into the baking dish. When you have covered the bottom of your baking dish with peaches, pause to sprinkle a generous layer of the sugar mixture over the top of all of the fruit.
Step 5
Continue slicing peaches into the baking dish, pausing each time you slice another layer of peaches to cover them with a layer of the sugar mixture. (I usually get 3-4 layers of peaches in, and use most of a 1/2-peck box of peaches to fill a 9x9 baking pan.) Finish with the last of the sugar mixture on top.
Topping:
Step 6
In the same bowl, cream together the butter & brown sugar, then the flour & cinnamon as well.
Step 7
Add in the oats, and mix together. This can be done with a spoon, or by hand.
Step 8
Using your hands, dot the oat mixture on top of the peach filling until it's mostly covered.
Step 9
Bake for 45-50 minutes.
Step 10
Serve alone, or with vanilla ice cream.
