Ingredients
4 servings
1 lbsboneless skinless chicken breasts
or thighs, cut into 1-inch pieces
2 cupsbroccoli florets
1 Tbspvegetable oil
1 clovesgarlic
minced
Leftover rice
for serving
For the sauce
Instructions
Step 1
In a small bowl, whisk together all the sauce ingredients until the cornstarch is fully dissolved. Set this aside.
Step 2
Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook until it's browned on all sides and cooked through. Remove the chicken from the skillet and set it aside.
Step 3
Add the broccoli florets to the same skillet and stir-fry for 2-3 minutes. If they start to get too dry, you can add a tablespoon or two of water to help them steam.
Step 4
Add the minced garlic and cook for another 30 seconds until fragrant.
Step 5
Return the cooked chicken to the skillet. Give the stir-fry sauce a quick whisk (since the cornstarch may have settled) and pour it over the chicken and broccoli.
Step 6
Serve immediately over your leftover rice.
