Instructions

Step 1
PREP & MARINATE LAMB CHOPS: Rinse Lamb Chops and pat dry. Set Aside. Chop Parsley and set aside. Then mix all the seasonings, chopped parsley and oil (optional) together to make an oil rub marinade. Generously put onto both sides of lamb chops, massage into the meat, and put in refrigerator to marinate for a minimum of 30 minutes to overnight. Let Lamb Chops sit out to get room temperature for 15-30 minutes before cooking. Note: If concerned about oil/calories you can use seasonings only as a dry rub instead of an oil rub.

COOK LAMB: In skillet, heat up 3 Tbsps of oil and add lamb chops allowing it to sear 2-4 minutes per side. When flip over to other side, add butter, thyme sprigs, rosemary sprigs and garlic cloves to the skillet. Baste lamb chops with butter from the skillet.

REST LAMB: Transfer lamb chops from skillet to serving platter, lightly cover with foil (not touching meat), and let it rest for 5-10 minutes. “Resting” the lamb helps the juice to redistribute to be more tender and flavorful.
