The Wrap
Step 1
Beat just 1 egg with a generous pinch of salt, some black pepper, and parsley flakes. Lightly oil a small non-stick pan over medium heat. Pour in the egg mixture, and if necessary tilt the pan to spread it into a thin, even circle. Cook until the bottom side of the wrap is a deep golden-brown, then flip for just a few seconds, short enough so that it doesn't lose its color, approx 5-7 secs. And that's it.. the final wrap should be firm and salty.
Wrap Topping
Step 2
Place the finished egg wrap on a plate with the browned side facing up. Spread a thin layer of russian dressing across the entire wrap. Follow with a layer of cream cheese. If you feel like being spicy today, you can do a light layer of red schug or harissa. And finally, you can top it with tiny-sliced tomatoes, making sure to discard any extra juice from slicing beforehand.
Scrambled Eggs
Step 3
In a bowl, whisk 2 eggs with a pinch of salt and a splash of lemon juice. Add a generous amount of oil to the pan over medium heat. Pour in the egg mixture, then add the american cheese and fried onions. Cook, stirring gently, until the scrambled eggs look ready, careful not to overcook them. The goal is for the scrambled eggs to be more creamy and less salty. Spoon the scrambled eggs onto the center of the prepared wrap. Fold the wrap in half like a taco while it's still hot, and gently press on it especially along the edges to close it as much as possible. And that's it! you can serve whole or slice into four pieces for easier handling.
