Instructions
Step 1
Thinly chop carrots, celery, onion, and garlic cloves.
Step 2
Combine bone broth and chicken broth in a large pot and bring to a simmer. If possible, submerge a metal strainer into the soup before step 3.
Step 3
Add veggies into the strainer (if possible) - or loose into the broth if necessary. Allow the soup to simmer until the carrots and celery are soft (~20-30 minutes).
Step 4
Once soft, remove the veggies from the pot and add to a blender with 1/2 cup broth mixture. Blend until smooth, then return the mixture to the pot (you will no longer need the strainer).
Step 5
Add the pastina to the soup base and allow to cook according to package instructions (likely 6-7 minutes). NOTE: constantly stir the pastina to avoid clumping and burning to the pan
Step 6
Stir in grated parmesan and black pepper. Serve warm with more parmesan and/or butter if desired.
