Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick cooking spray and set it aside.
Step 2
In a mixing bowl, crack the eggs and whisk them until well beaten.
Step 3
Add the cottage cheese, grated Parmesan cheese, chopped spinach, diced bell peppers, diced red onion, chopped parsley, olive oil, garlic powder, dried oregano, salt, and black pepper to the beaten eggs. Stir until all ingredients are thoroughly combined.
Step 4
Pour the egg mixture into the prepared baking dish, ensuring it is spread out evenly.
Step 5
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
Step 6
Once baked, remove the dish from the oven and let it cool for a few minutes before serving.
Step 7
Cut the Baked Cottage Cheese Eggs into individual portions and serve hot. Garnish with optional toppings such as sliced avocado, crispy bacon bits, or diced tomatoes for added flavor and texture.
