Step 1
Honey Roasted Sweet Potatoes with Feta & Pecans – so easy and sooo good!! Preheat oven to 400°F (200°C). Toss 2 large sweet potatoes (peeled + cubed) with 2 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp cinnamon (if you like that warm spice vibe). Spread on a baking sheet (line with parchment for easy clean-up!) Roast for 25–30 mins, flipping halfway, until tender and golden on the edges. Take out and while still warm, sprinkle crumbled feta + chopped pecans over the top. Drizzle with a little honey to finish. So good with grilled chicken or on its own as a warm salad!
