Ingredients
2 servings

2 cupswater
hot, from a kettle or tap, not boiling

1 tsponion powder

1 tspgarlic powder

½ tspcumin

½ tspdried thyme

¼ tspfennel seeds
crushed slightly with a spoon for more flavor

¼ tspcayenne
or chipotle, adjust for heat preference

½ tspsalt
or to taste

¼ tspgaram masala
Optional, or five spice for depth, choose one to avoid clashing

1 tspnutritional yeast
if you have it, for umami
Instructions
Step 1
Heat 2 cups of water until hot but not boiling (microwave for 1–2 minutes or use hot tap water).
Step 2
In a heat-safe container or mug, combine all the seasonings.
Step 3
Pour the hot water over the seasonings and stir well until fully dissolved.
Step 4
Taste and adjust with more salt, cayenne, or other spices as needed.
Step 5
Strain through a fine mesh sieve if you want to remove any fennel seed bits.
Step 6
Use immediately in your recipe.
