Elote Chicken Salad

The flavors of elote or esquites in chicken salad form. Great for sandwiches or wraps. Or as a dip with tortilla chips. NOTES: I used the precooked rotisserie chicken from the grocery store. Use what you want but keep in mind the amount will vary and not be exactly 500g. I weighed it and estimated.

Instructions

Step 1
Preheat oven to 425 and spread parchment paper on baking tray.

Dry off thawed corn and spread on tray and spray or mix with oil.

Bake until starting to turn brown. About 15 minutes. I put them under the broiler for a bit more color.

Chop onion, cilantro, and jalapeños if adding, and shreds chicken if it isn’t already.

I’m a large bowl mix chicken, cotija, cilantro, onion, mayo, lime zest and juice, jalapenos (if adding), and sour cream or Greek yogurt.

When corn is done let cool a bit before mixing with other ingredients in bowl.

Season with salt, pepper, and spices and mix well.
