Elote Chicken Salad

The flavors of elote or esquites in chicken salad form. Great for sandwiches or wraps. Or as a dip with tortilla chips.
NOTES:
I used the precooked rotisserie chicken from the grocery store. Use what you want but keep in mind the amount will vary and not be exactly 500g. I weighed it and estimated.

Instructions
Step 1
Preheat oven to 425 and spread parchment paper on baking tray.



Step 2
Dry off thawed corn and spread on tray and spray or mix with oil.



Step 3
Bake until starting to turn brown. About 15 minutes. I put them under the broiler for a bit more color.
Step 4
Chop onion, cilantro, and jalapeños if adding, and shreds chicken if it isn’t already.





Step 5
I’m a large bowl mix chicken, cotija, cilantro, onion, mayo, lime zest and juice, jalapenos (if adding), and sour cream or Greek yogurt.











Step 6
When corn is done let cool a bit before mixing with other ingredients in bowl.
Step 7
Season with salt, pepper, and spices and mix well.
