Step 1
Break carcass into pieces. Add pancetta to pan and fry til slightly golden. Add carcass bits and cook till brown in places. Add chilli flakes, onions, thyme and zest. Cook for 19 mins. Add couple tbls flour and cook til flour golden. Pour in vinegar and let it mostLy bubble away. Add stock, bring to boil, turn down to simmer and cook 30 mins partially covered. Separate bones from sauce before adding to cooked pasta
