Instructions

Step 1
Bring a large pan of slightly salted water to the boil.
Step 2
Garlic Bread: Pre heat oven to 160C
Step 3
Cut 8-12 grooves into the baguette taking care not to cut right through the bread.
Step 4
Finely grate 2 garlic cloves and mix with the butter at room temp. Add a pinch of parsley to the butter mix then spread evenly into the grooves of the bread.
Step 5
Bake in the oven for 8-10 minutes while the pasta cooks.
Step 6
Carbonara mixture: Dice the peppers and onions and cut the bacon into medium sized pieces. Chop the mushrooms and grate 1 clove of garlic.
Step 7
Add the oil to a hot pan and add the onion, bacon and garlic. Season with salt and pepper and add a pinch of oregano and basil then cook gently until onion and peppers are soft and bacon starts to brown.
Step 8
Add the mushrooms and cream and leave to simmer over a low heat while the pasta cooks.
Step 9
Carbonara Sauce: Crack the eggs into a bowl and add ground black pepper to taste. Finely grate the Parmesan cheese, and add to the eggs mixing well.
Step 10
The sauce can be prepared while the pasta is cooking.
Step 11
Pasta: Cook the pasta according to the instructions on the packet then drain thoroughly.
Step 12
Add the Carbonara sauce mix stirring well, and then add the Carbonara mixture continuing to stir until the sauce and mixture are evenly distributed in the pasta.
Step 13
Serve in warm bowls with the garlic bread.
