1 ⅓ cupgranulated sugar

400mlcoconut milk

½ tsppandan extract
depends how dark green color you like

7eggs
large, 9 eggs will make it softer last longer at room temp vs 7 eggs is more chewier

½ Tbspvanilla extract

1 Tbspcooking oil
or coconut oil or unsalted melted butter

Instructions
Step 1
Leave uncracked eggs sit at room temperature for about an hour.
Step 2
Crack eggs into a bowl and cut the yolk as instructed. Let the eggs sit for another 30 minutes so do this first before you get started with the rest of the instructions.

Pre Heat oven to 350° F with bundt pan inside

In a bowl, mix coconut milk and granulated sugar. Stir well

Add in pandan extract and mix Then set aside

In a bowl, Crack eggs and cut yolks in fours with scissors, as instructed

In another bowl, mix in tapioca flour, salt, and double acting baking powder (aluminum free if metallic taste not desired)
Give it a quick stir

Add in the wet ingredients

Mix well with whisk until smooth texture

Add vanilla extract to egg bowl

Fold in the egg & vanilla extract with the batter
NOTE
Step 12
Once you add the eggs on the batter, do not stir it too much. Just fold it into the batter with a spoon as instructed--stirring too much will reduce the Honeycomb structure of the cake

Sift/Strain the batter

Add 1 tablespoon of coconut oil or butter, then give it a stir gently

Let batter sit out for about 5 minutes to let the baking powder react to get a higher rise

Take out bundt pan from preheated oven

Spray bundt pan with avocado oil spray or Pam baking or butter spray to give golden look. Brush pan evenly

Pour in batter evenly with circular motion using a strainer to help not having a lopsided cake

Stir by swirling gently with a fork

Bake for 55 minutes at 350F on middle rack

after turn off the oven -let it rest in the oven with door partially open for 20 minutes before take it out.
