Instructions

For the slow-cook

Step 1
TRIM the beef and cut into 2.5 cm (1 in) cubes. In a heavy-based saucepan placed over high heat. Add half the oil and half the butter and brown the beef in batches. Remove to a dish when browned.
Step 2
Add the remaining oil as needed, and set aside the remaining butter
Step 3
REDUCE the heat to medium, add the onion and cook gently for 5 minutes to soften.
Step 4
Sprinkle in the saffron, ginger and cinnamon and cook for minute or so.
Step 5
Add one quarter cup of water, 1 teaspoons salt and a generous grind of black pepper. Stir well and return the beef to the pan. along with the bunch of coriander sprigs.
Step 6
Cover and simmer over low heat for 1 - 5 hours.

For the last 30 minutes

Step 7
Add the raisins and 1 tablespoon of the honey, then cover and simmer for a further 30 minutes, or until the meat is tender
Step 8
Heat the remaining butter in a frying pan and add the apples.
Step 9
Cook for 10 minutes, turning the apples frequently. with the remaining honey, dust with cinnamon and cook for 5 minutes, or until softened
Step 10
TRANSFER meat to a Serving dish, pour the sauce over arrange the apples on too
Step 11
Serve hot, sprinkled with toasted sesame seeds.
