Instructions
Step 1
Defrost the spinach in the microwave and squeeze it very dry.

Step 2
Beat the eggs with sriracha, garlic paste, oregano, chilli flakes, cayenne, salt, and pepper.

Stir in spinach and sun-dried tomatoes.

Step 4
Heat oil in a non-stick pan. Pour in the egg mix.

Step 5
Pull the set edges in so uncooked egg runs to the sides.
Step 6
Fold in half and serve warm.
