Loaded Waffle Fries - Party Food
A play on loaded baked potatoes. Good for a party and feeding dudes. I usually make a double batch.

Ingredients

½ cuponion
minced
2 teaspoonsgarlic
minced or jarlic
1zucchini
small, or yellow squash, grated
1carrot
medium, grated
1 LbGround Beef
or the Costco 1.3 Lb
1 teaspoonchili powder
spinach
Minced
1can chili
mild, gluten free
1 cupcorn canned
or frozen, thawed
Guacamole
or avocado
green onions
sliced
sour cream
shredded cheese
Black olives
Sliced, optional
Instructions
Step 1
Preheat oven while chopping and grating veggies.
Step 2
Bake fries. Sauté veggies until soft, add meat and chilli powder, brown. Add minced spinach to wilt at the end.
Step 3
If cooking more than one tray of fries, rotate in oven 1/2 way through cook time. Waffle fries are best on the softer side for this so aim for the bottom of the cooking time range.
Step 4
Warm chili in a separate pot or combine with meat mixture, heat through. Use a crock pot if serving later.
Step 5
Serve like nachos, add desired toppings.
