Instructions

Step 1
Preheat oven to 325. Grease the cups of a 12 cup muffin pan with cooking spray.
Step 2
Cover the bottom of each muffin cup with diced ham. Add sliced green onion. Whisk together eggs, potato flakes, and cream with salt and pepper to taste. Pour the egg mixture into the muffin pan, about 1/4 cup each. Top with smoked gouda.
Step 3
Bake for about 22 minutes at 325 F.
