Ingredients
6 servings

10 ozpasta
penne, rigatoni, or spaghetti

1 lbItalian sausage
mild or spicy, casings removed

1 Tbspolive oil

1onion
small, finely chopped

3cloves garlic
minced

½ tspred pepper flakes
adjust to taste

1 x 14 ozcan diced tomatoes
with juices

1 x 8 ozcan tomato sauce

½ cupchicken broth
or dry white wine

1 tspitalian seasoning

½ tspsmoked paprika
optional, for depth

¼ tspsalt
to taste

¼ tspblack pepper
to taste

½ cupheavy cream
or half-and-half, for a creamy version

½ cupgrated parmesan cheese

fresh basil
or parsley, for garnish
Instructions
Cook the Pasta
Step 1
Boil in salted water according to package instructions. Reserve ½ cup of pasta water before draining.
Make the sausage
Step 2
In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it apart, and cook until browned (5-6 minutes). Remove excess grease if needed.
Step 3
Add onion and cook until softened (3 minutes). Stir in garlic and red pepper flakes, cooking for another 30 seconds until fragrant.
Build the sauce
Step 4
Pour in diced tomatoes, tomato sauce, and chicken broth (or wine) into a pot.
Step 5
Add Italian seasoning, smoked paprika, salt, and pepper. Stir well.
Step 6
Simmer for 10 minutes, allowing flavors to blend.
Step 7
Make it creamy (optional): Stir in heavy cream and Parmesan cheese, letting it melt into the sauce.
Combine everything
Step 8
Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time.
Serve
Step 9
Garnish with fresh basil or parsley and extra Parmesan.
