Ingredients
4 servings
125gsoya chunks
not mince
3 cubesvegetable stock
with water to cover the soy chunks
sunflower oil
250gonions
finely chopped
2 teaspoonsgarlic
minced
rice flour
1 Tbsptomato paste
smoked paprika
sweet paprika
Austrian, Hungarian style
chili powder
1bay leaf
marjoram
caraway seeds
traditional, optional
vinegar
juniper berries
salt
adjust to taste
black pepper
fresh parsley
chopped
vegan sour cream
Instructions
Step 1
Soak TVP chunks in some hot vegetable stock for 15-30 min, then gently squeeze out excess liquid. Reserve the liquid.
Step 2
Add a generous amount of sunflower oil to a large pot. Gently fry the onions, adding salt to the pot to help soften them.

Add garlic

Add rice flour
Step 5
add tomato paste
Step 6
Add water and turn down to let cook.
Step 7
Add sweet paprika, more water, repeat with smoked paprika and more water. Add a small amount of chili powder.

Add bay leaf, marjoram, caraway seeds

Meanwhile coat the Soya chunks in rice flour
Step 10
Use the vegetable stock set aside and add to the goulash
Step 11
Add a splash of vinegar

Add Juniper Berries

Add salt & pepper

In a fry pan with a generous amount of sunflower oil, fry the soya chunks until brown. Be careful not to let them stick to the pan.
Step 15
Add the soy chunks to the goulash and let it simmer half covered for 30 mins. Add water as needed.
Step 16
Serve with vegan sour cream and parsley.
