1 lb93% lean ground turkey
or lean ground beef
1onion
small, finely diced
2 ½ cupstomato pasta sauce
no sugar added
2zucchini
medium, sliced lengthwise into thin strips, use mandoline if possible
1 cuplow-fat cottage cheese
½ cupplain nonfat greek yogurt
1egg
large, for binding
2 cupsreduced-fat shredded mozzarella cheese
¾ cupshredded parmesan cheese
2 tspitalian seasoning
½ tspgarlic powder
½ tspsalt

Instructions
Step 1
Prep zucchini noodles: Slice zucchini lengthwise into thin sheets. Lay on paper towels, sprinkle lightly with salt, and let sit 15 minutes to release water. Pat dry.
Step 2
Cook meat sauce: In a skillet, sauté onion until soft. Add ground turkey, cook through, drain. Stir in pasta sauce, Italian seasoning, and garlic powder. Simmer 10 minutes.
Step 3
Make cheese filling: Mix cottage cheese, Greek yogurt, egg, and ¼ cup parmesan in a bowl.
Step 4
Assemble lasagna: In a baking dish, layer zucchini, meat sauce, cottage cheese mixture, mozzarella. Repeat until ingredients are used. Top with remaining mozzarella + parmesan.
Step 5
Bake: 375°F (190°C) for 35–40 minutes until bubbly. Let rest 10 minutes before slicing.
