Zuppa Toscana

Everything cooks in 1 pot. Make sure you temper the heavy cream, or it may curdle. Once you're done, there will be lots of oil on top, that's packed full of delicious flavor. Swirl the pot before ladling into bowls.

Instructions

Step 1
Cook bacon till chewy, remove and set aside

Cook sausage, break it up into small pieces, cook till done, remove and set aside

Add butter and sauté onions till translucent
Step 4
Add garlic and pepper, saute for 1 minute

add broth, water, and potatoes, boil on medium high heat till potatoes are fork tender, about 14 minutes

Add kale, sausage, bacon, bring to a light boil
Step 7
TEMPER heavy cream, slowly add to pot
Step 8
simmer for 30 min over low heat
Step 9
Skim scum if any
Step 10
season to taste
Step 11
Serve with parmesan shavings
