Instructions

Step 1
crack 3 eggs in a bowl & lightly scramble with a fork but not fully. make sure the yolk is broken.
Step 2
add cottage cheese in the same bowl & scramble further. make sure to break the cottage cheese up into smaller pieces with the same fork
Step 3
turn on stove dial to medium heat & let pan heat up for a couple of minutes
Step 4
when the pan is hot, add butter/oil of choice
Step 5
(optional) add spinach & cover with lid
Step 6
pour egg & cottage cheese mixture into the lightly greased, hot pan
Step 7
grab a spatula & mix the egg mixture with the cooked spinach. cover with lid for a few minutes then, flip the egg.

(optional) place the sliced cheese on top & cover with lid
