Instructions
Step 1
To make the meatballs, combine all the meatball ingredients in a large bowl and mix well. With slightly damp hands, form the mixture into 30 (1-inch) balls. Spray a nonstick skillet with nonstick spray and heat over medium-high heat. In 2 batches, add the meatballs and cook, turning often, until browned, about 4 minutes. Transfer to a plate.
Step 2
To make the sauce and pasta, heat the oil in a large saucepan over medium-high heat. Add the onion, garlic, and oregano; cook, stirring occasionally, until the onion begins to soften, 2-3 minutes. Stir in the tomatoes and salt; bring to a boil. Reduce the heat and simmer, covered, about 10 minutes. Add the meatballs, return to a simmer, and cook partially covered, stirring occasionally, until the meatballs are cooked through and the sauce has thickened, about 20 minutes.
Step 3
Meanwhile, cook the linguine according to package directions, omitting the salt if desired; drain.
Step 4
Divide the linguine among 6(or however many servings you're making) bowls and top each with sauce and meatballs.
