Instructions
Step 1
Sauté chopped leeks, onion, and garlic in olive oil or butter until soft.
Step 2
Add peeled, cubed squash, a pinch of turmeric, salt, and pepper.
Step 3
Add enough broth to cover and simmer until squash is tender.
Step 4
Blend until creamy; add 3/4 can coconut milk
Step 5
For baby: Before seasoning heavily or adding cream, scoop out some of the pureed soup.
Step 6
Thin with a little breast milk or formula if needed.
