Instructions

Step 1
Heat the thick and thin coconut milk over a medium heat in a saucepan and bring to the boil
Step 2
Add the ginger, lemongrass, shallots, chillis, and kaffir leaves and cook for about 10 seconds
Step 3
Add the chicken followed by the fish sauce
Step 4
Cook for about 2 mins, until the chicken is cooked
Step 5
Stir in the coriander and lime juice
Step 6
Remove from the heat and serve with fresh coriander leaves
