Instructions
Step 1
Microwave sweet potatoes on high until tender, around 15-20 minutes.
Step 2
Smash between two sheets of baking paper with a burger press, spatula, or pan.
Step 3
Heat a non-stick frying pan over medium-high heat.
Step 4
Add cheese to the pan in small rounds, no need for oil, roughly the same size as the smashed potato.
Step 5
Top cheese with sweet potato, cook until golden and crispy, then flip and cook until golden and crispy on the other side.
Step 6
Fry the eggs, adding crispy chili oil.
Step 7
Serve pancakes with a fried egg on top, garnishing with creme fraiche or yoghurt, pickled red onions, and sliced chives or spring onion.
