Instructions
Step 1
1. In one bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt.
Step 2
In a bowl, whisk egg, milk (and yogurt if using), melted butter, and vanilla.
Step 3
Combine wet and dry ingredients; mix until just combined (a few small lumps are fine).
Step 4
Let the batter rest 5–10 minutes.
Step 5
Cook on a lightly oiled nonstick pan over medium-low heat until bubbles form on top, then flip and cook until golden.
