A hearty roasted tomato basil soup, combining fresh grape tomatoes, red onion, bell pepper, and garlic. Blended with basil, vegetable broth, cream, and parmesan.

Instructions
Step 1
On a baking sheet, add tomatoes, onion, red pepper, and bulbs of garlic.
Step 2
Drizzle with olive oil, salt, pepper, oregano, and thyme.
Step 3
Roast at 400F for 35-40 minutes.
Step 4
Place in blender, squeezing garlic out of bulbs. Add basil, blend.
Step 5
Pour into a pot on medium heat.
Step 6
Add vegetable broth, heavy cream, tomato paste, sugar, parmesan cheese.
Step 7
Stir and reduce to simmer once bubbling.
Step 8
Simmer for 15 minutes. Serve.
