Step 1
1. Optional: Make buttermilk by mixing vinegar into warm milk. Let sit 5–10 minutes. 2. Separate eggs into yolks and whites. 3. In a medium bowl, whisk egg yolks + vanilla + melted butter until smooth. 4. Slowly whisk milk into the yolk–butter mixture to form the wet base. 5. In a large bowl, whisk together all dry ingredients. 6. Pour wet mixture into dry and stir gently until just combined. Don’t overmix. 7. Whip egg whites to soft peaks. 8. Gently fold egg whites into batter in 2–3 additions. Stop when mostly combined — streaks are fine. 9. Let batter rest 10–15 minutes. 10. Cook in a preheated hot waffle iron until golden brown and crisp.
