1 ½ cupsall-purpose flour
2 tablespoonssugar
1 teaspoonbaking powder
½ teaspoonbaking soda
¼ teaspoonsalt
1egg
large
1 cupmilk
or buttermilk for a tangier flavor
¼ cupmarshmallow fluff
not too much to avoid sogginess
3 tablespoonsunsalted butter
melted
1 teaspoonvanilla extract
½ cupmini marshmallows
optional, for extra marshmallow flavor
Instructions
Step 1
Preheat and Prep: If making waffles, preheat your waffle iron. If making pancakes, heat a non-stick griddle or pan over medium heat.
Step 2
Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Step 3
Wet Ingredients: In another bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
Step 4
Mixing the Batter: Slowly pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if the batter is a bit lumpy). Avoid overmixing to prevent tough waffles/pancakes.
Step 5
Add Marshmallow Fluff: Gently fold in the marshmallow fluff, ensuring it’s evenly distributed but without fully melting into the batter. You can also fold in mini marshmallows if you’d like extra marshmallow flavor.
Step 6
Cooking: For Waffles: Grease the preheated waffle iron and pour in the batter, cooking according to the iron’s instructions until golden and crisp. For Pancakes: Grease your heated griddle or pan, then pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden on both sides.
Step 7
Serve: Serve your waffles or pancakes warm with butter, syrup, or even a drizzle of extra marshmallow fluff on top for added sweetness! Tip: Avoid adding too much marshmallow fluff to the batter as it can make the mixture too sticky or cause the waffles/pancakes to crumble. The ¼ cup should give you a fluffy texture while keeping the foundation firm.
