Ingredients

200gconchiglie
shell pasta
1 teaspoonolive oil
100gbutton mushrooms
sliced
1clove garlic
crushed
2zucchini
courgettes, diced
1 tablespoonolive oil
extra
2 tablespoonsplain flour
625mlreduced-fat milk
75greduced-fat cheddar
grated
1 x 425gtin tuna in spring water
drained and flaked
½ cupflat-leaf parsley
chopped, Italian
50ggrated Parmesan
Instructions
Step 1
Preheat the oven to 180°C.
Step 2
Cook the pasta according to the packet instructions until al dente. Drain.
Step 3
Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the mushrooms and cook for 2—3 minutes until golden. Add the zucchini and cook for another 3 minutes.
Step 4
Add the extra tablespoon of olive oil, stir in the flour, and cook for 1 minute.
Step 5
Gradually whisk in the milk and cook until the sauce thickens.
Step 6
Stir in the cheddar until melted.
Step 7
Mix in the cooked pasta, tuna, and parsley. Transfer to a baking dish.
Step 8
Sprinkle with parmesan and bake for 15-20 minutes until golden.
