Sesame Ocean Trout with Mixed Mushrooms

Instructions

Step 1
Preheat oven to 200°C. Squeeze enough lime quarters to yield 2 tablespoons lime juice, and reserve the others.
Step 2
In a small bowl, combine the sesame seeds. Sprinkle seeds over the fish, then transfer fillets to a baking tray. Bake for 10 minutes, or until cooked.
Step 3
Meanwhile, heat oil in a large frying pan or wok over high heat. Add garlic, ginger, and spring onions, and cook for 2 minutes, or until onions are soft.
Step 4
Add mushrooms to the pan and stir-fry until mushrooms are cooked. Serve trout fillets with sautéed mushrooms and garnished with fresh coriander.
