Instructions

Step 1
Blend avocado, milk, cocoa, sweetener, and vanilla until smooth.
Step 2
Stir in chia seeds and refrigerate 2–3 hours.
Step 3
Blend the pudding in a high powdered blender to create a texture reminiscent of a chocolate mousse.
Step 4
Line a sheet tray with parchment paper. In a pan, add golden monkfruit sweetener with 2 Tbsp of water. Once the mixture gets melty and hot, stir in pistachios to coat, then turn them out onto the parchment lined sheet pan. Let cool. Once cooled, break up the praline pistachios.
Step 5
Melt dark chocolate and pour it on top of the pudding. Let harden. Then add some of the pralined pistachios and a few pomegranate seeds to finish and sprinkle with a pinch of large flake sea salt.
