Creamy Tomato-Basil Soup

Instructions

Step 1
Heat butter in a medium saucepan. Add shallot and saute until translucent.
Step 2
Meanwhile in a small bowl mix together tomato paste, garlic, salt, pesto, and Italian seasoning. Add to pot and cook, stirring frequently, until ingredients become fragrant.
Step 3
Add flour and mix thoroughly with tomato paste mixture. Add canned tomatoes and stir in sugar.
Step 4
Simmer for 10 minutes or until warm. Stir in cream
Step 5
Stir in Parmesan and heat until cheese melts (to avoid stringiness, add a couple of teaspoons of sodium citrate in step 3 when you add the sugar).
Step 6
Serve garnished with cheese and fresh basil, if you have on hand. Great with a grilled cheese!
