NOTES:
1. use a vegetable stock cube if you want to keep this vegetarian.
2. if you're using chicken stock, you can skip the stock cube and water.
3. use coconut cream as a dairy-free option to heavy cream.
4. adjust salt, black pepper and sugar to your taste.

15gbutter
1onion
small, chopped
4cloves garlic
chopped
1carrot
small, chopped
500gtomatoes
ripe
½ tspsalt
½ tsppaprika
½ tspblack pepper
½ tspgarlic powder
½ tspred chilli powder
¼ tsporegano
½ Tbspbrown sugar
3 Tbsptomato paste
1chicken stock cube
500mlwater
5basil leaves
80mlthickened cream

Instructions
Tomato Soup
Step 1
fry onions and garlic in butter: add butter to a pot, and let it melt. add chopped onion and fry for 1 minute over medium heat. then, add chopped garlic and fry for another 1 minute over medium heat.
Step 2
add carrot: add chopped carrots to the pot and cook for about 2 minutes over medium heat until they soften.
Step 3
add tomatoes: cut tomatoes into quarters then add to the pot. keep stirring as you cook the tomatoes for around 2 minutes over medium heat.
Step 4
add seasonings: add salt, paprika, black pepper, garlic powder, red chilli powder and oregano to the pot. then, add tomato paste and a bit of sugar.
Step 5
add chicken stock: add a chicken stock cube and water, then a few fresh basil leaves. mix everything together.
Step 6
bring to a boil: bring the mixture to a boil, then cover with a lid, and leave to simmer on low heat for 20 minutes. after the 20 minutes have passed, leave to cook at medium heat for another 10 minutes.
Step 7
blend: at this point, the tomato soup mixture will look soft and mushy. let this cool a little, before using an immersion blender to blend until smooth.
Step 8
add cream: once the tomato soup looks smooth and thick, add double cream/heavy cream and mix it in. then, bring the mixture to a boil again. then, cover and leave to simmer on low heat for 10 minutes.
Grilled Cheese

butter and mayo mixture: in a small bowl, mix together butter and mayo until smooth. slather this on your bread.
Step 10
add cheese: add your mix of cheeses, then sprinkle on some red chilli flakes and dried parsley.
Step 11
cook: top the sandwich with the remaining slice of bread, then cook in a non-stick pan. cover the pan with a lid and let the sandwich cook at low-medium heat for around 2 minutes. then change sides, press down on the sandwich, and cook for another 2 minutes.
