medium sized, cut into rough squares with the skin
1onion

0.5 bulbgarlic
minced
3 tablespoonsvegetable oil

or omit for less heat/spice
1 tablespoonroasted curry powder
1 pinchturmeric
10curry leaves
1 cupcoconut milk
heavy
salt

Instructions
Step 1
Fry the onion and garlic over a medium flame until golden brown. Add chili powder, unroasted curry powder, turmeric, and curry leaves, then stir.
Step 2
Add the pumpkin when the mix becomes aromatic. Stir fry briefly, then add coconut milk and biriyani mix, lowering the heat to simmer.
Step 3
Cover and stir occasionally. Cook until the pumpkin is tender but not mushy. Add salt if needed. Let the curry rest to thicken the gravy.
