Instructions

Step 1
Melt olive oil and butter in a cast iron pan, sauté onions until translucent.
Step 2
Cook the carrots and celery briefly. Add the meat with a pinch of salt and pepper, and brown well. Add milk and reduce over low heat until completely reduced.
Step 3
Season with nutmeg. Add the white wine, reduce again completely, add the peeled tomatoes, and reduce over low heat for 2-3 hours. Stir occasionally and add a little water if necessary.
Step 4
As soon as the fat separates from the sauce, it is perfect.
