Step 1
Fry onion and capsicum
Step 2
Dice chicken and chorizo then fry until cooked
Step 3
Add onion and capsicum to pan with meat, add garlic and Mexican spices and combine
Step 4
Make each enchilada with the wraps, adding some meat filling along with some cheese and chunks of pineapple
Step 5
Put half the enchilada sauce in an oven tray, lay in each enchilada, then top with remaining sauce and lots of cheese. Bake until crispy
Step 6
Serve with sour cream and salsa
