Step 1
Meatballs
1. Mix all meatball ingredients gently until just combined.
2. Roll into 3/4-1 inch meatballs (about 20-24)
3. Set aside while you start the soup. Soup Base
1. Bring the broth to a gentle boil
2. Add carrot and zucchini. Simmer 8-10 minutes until just tender.
3. Add the raw meatballs one by one.
4. Simmer 12-15 minutes until meatballs are full cooked through.
5. Add orzo.
6. Stir in spinach and cook 1-2 minutes until wilted.
7. Taste and adjust seasoning with salt/pepper.
