Chicken wellington with Brie & cranberry

Chicken Wellington with Brie Bacon & Cranberry
2chicken breasts
large
salt
black pepper
6 slicesstreaky bacon
4 ozBrie cheese
sliced
3 Tbspcranberry sauce
1sheet puff pastry
1 Tbspfresh thyme leaves
1 tsprosemary
finely chopped
2 Tbspbutter
softened
1egg
for egg wash
¼ cupchopped walnuts
1 Tbspmaple syrup
1 Tbsphot honey
Fresh sage leaves
optional garnish
Instructions
Step 1
Golden Festive Chicken Wellington with Brie, Bacon & Cranberry
Step 2
Preheat oven to 400°F (200°C).
Step 3
Season chicken breasts with salt, pepper, thyme, and rosemary butter.
Step 4
Sear chicken in a skillet until lightly golden on both sides; set aside to cool.
Step 5
Lay out bacon strips slightly overlapping. Place chicken on top.
Step 6
Add Brie slices and cranberry sauce over the chicken.
Step 7
Wrap the bacon around the chicken tightly.
Step 8
Place wrapped chicken onto puff pastry. Fold the pastry over and seal edges.
Step 9
Brush with egg wash.
Step 10
Mix chopped walnuts with maple syrup, then press onto the top for a crunchy crust.
Step 11
Bake for 28–32 minutes or until golden, flaky, and cooked through.
Step 12
Drizzle hot honey and garnish with crispy sage before serving.
