Delicious Healthy Mashed potatoes!

Instructions

Step 1
Boil your cubed potatoes in the 2 boxes of chicken broth until soft enough to mash.
Step 2
Strain your potatoes into a bowl, saving the left over broth.
Step 3
Add 1 & 1/2 cups cottage cheese to a blender (or a bowl of youre using an immersion blender) along with 1 & 1/2 cups of the leftover broth. Saving whatever broth is left in your fridge for use in another recepie.
Step 4
After blending the broth and cottage cheese. Add them back to the potatoes and beat well with a mixer.
Step 5
After potatoes are beaten well, add the egg and beat until combined well. (The heat from your boiled potatoes cooks the egg well enough to be safe to eat if anyone had any concerns).
Step 6
Next add your butter extract as well as your seasonings and mix well. Taste every now and then as you mix to know if you should add more salt or other mixes. Then you're ready to serve to many guests, or bag up a bunch for freezing for sides for the family! Remember this recepie is healthy and packed with protein and tastes amazing! I hope you enjoy.
