Instructions
Step 1
Put all ingredients into a mixer and mix with a dough hook until it forms a smooth ball and pulls away from the bowl walls.
Step 2
Let ferment until doubled in size.
Step 3
Divide into 100g balls. Put a hole in the middle, and spin around your finger until a bagel shape forms.
Step 4
Place on a baking sheet and cover until they have doubled in size, and jiggle when you shake the pan.
Step 5
Bring a large pan of water to a boil with a 1/4c sugar.
Step 6
Once the water is at a rapid boil, place bagels one by one into the water. Make sure not to crowd the pan.
Step 7
Spoon water over the bagels, and let boil for 30 seconds to 1 minute.
Step 8
Strain out of the water and place back on the pan. Top with cheese of your choice.
Step 9
Bake in a 400 degree oven for 18-22min.
