Step 1
Coat veggies with canola oil and roast. Boil noodles and save 1 cup of pasta. Blend pasta water and roasted veggies and cheese and cottage cheese together with nutritional yeast and salt and pepper to taste till creamy. Add noodles to sauce and serve.
