Traditional Tahini Sauce

Traditional tahini is made of 5 ingredients and is very easy to make. I have seen some recipes with maple syrup and other addons which in my opinion changes the taste profile and spoil the flavor. this recipe is the one used by most people in the middle east. I recommend using high quality raw tahini such as Al Arz (which i use) or other well known brands. It makes huge difference Depends on the exact raw tahini used, the amount of water may change significantly. Our goal it to achieve the exact texture and flavor. If the result is too watery, the flavor will become dull and dilluted. We will be adding the water in a few steps until we reach silky and smooth (not creamy) texture. Again, the type of tahini paste you choose will affect the result. This recipe is vegan and keto friendly. 0.2g Net Carbs (0.7g carbs-0.6g fiber) 9g Fat 4g Protein

Ensure your raw tahini paste is well mixed with no bumps. You may need to mix it well before using as tahini paste tends to separate from the oil over time on the shelf. Add all ingredients, except water into a medium size bowl and start combining the ingredients until you get a thick paste

Start adding cold water, 1/4 cup at a time and mix well to combine. The paste will start changing color towards white. Repeat this step until the mixture become silky. Test it by grabbing a spoonfull and pore it back in. It should easily but slowly.
You want the thickness and texture to look like thick greek yogurt.
