Instructions

Step 1
Combine warm water, active starter, salt, and flour with a wooden spoon in a large mixing bowl.
Step 2
Cover air tight and allow to rest for 30 minutes (hydrate the flour).
Step 3
Round one stretch: Grab the edge of the dough and pull up stretching it out as you pull upwards. Bounce the dough to stretch if needed. Place dough that is in your hands over the lump. Turn the bowl about a quarter turn and complete another stretch and fold. Repeat two more times.
Step 4
Round two stretch: After thirty minutes complete another round of stretch and folds. Cover and allow the dough to rest another 30 minutes.
Step 5
Complete one last stretch and fold round. Cover with a lid, damp towel, or plastic wrap. Let the dough nearly double in size, usually 4 hours.
Step 6
Place the dough on a lightly dusted flour surface. Carefully old the dough onto itself and roll up. Try not to delete or lose the pockets of air already showing. Then shape into a ball or log (depending on the shape of your Dutch oven) by tucking the bread under itself to create tension.
Step 7
Let the dough sit out for 15-20 minutes uncovered. This prevents the dough from sticking to the tea towel during the next rise.
Step 8
Transfer to a floured banneton or bowl with a floured tea towel seam side up.
Step 9
Cover with plastic or place in a plastic bag and tie the ends. Let the dough rest and rise for at least 3 more hours for a quick bake, or best overnight in the fridge.
Step 10
Preheat a dutch oven to 500 degrees for the last 45-60 minutes of the dough completing.
Step 11
Place dough on a piece of parchment paper.
Step 12
Dust with flour and score with lame or razor blade.
Step 13
Carefully, transfer the piece of parchment paper with the dough into the hot dutch oven. Place the lid back on and place the dutch oven into the hot oven. Bake for 20 minutes.
Step 14
Remove the lid with oven mitts, turn the oven temperature down to 475, and bake an additional 15-20
