Instructions

Step 1
Cook the onion in a cast iron dish for 5 mins until soft. Add the rest of the ingredients, except the lemon juice, and bring to a boil.
Step 2
Reduce to a simmer and cook for 20 mins. Take off the heat and add the lemon juice.
Step 3
Serve and sprinkle with any additional toppings (chilli oil, fresh coriander and crispy onions are a great shout).
