Ingredients

2chicken breast
large, butterflied
1 TbspAll-purpose Seasoning
1 Tbspolive oil
1 tspsmoked paprika
½ tspblack pepper
1 tsplemon zest
2 Tbspbutter
1 Tbspolive oil
2cloves of garlic
minced
1shallot
small, minced
¼ cupwhiskey
1 ¼ cupheavy cream
½ cupparmesan grated
¼ cuppecorino romano
½ cuppasta water
¼ tspwhite pepper
⅛ tspnutmeg
½ tsptruffle salt
1 Tbsplemon juice
1 tspmaple syrup
optional
8 ozchickpea pasta
salt
for water
Instructions
Step 1
1. Season chicken with oil and spices. Sear 4 to 5 minutes per side until golden. Rest and slice.
Step 2
2. Cook pasta until al dente and save 1/2 cup pasta water.
Step 3
3. Melt butter and olive oil in a pan. Add garlic and shallot and cook until fragrant.
Step 4
4. Remove from heat. Add whiskey. Return to heat and reduce by half.
Step 5
5. Add cream, white pepper, nutmeg, Parmesan, and Pecorino. Stir until smooth. Add pasta water to adjust.
Step 6
6. Add truffle salt and lemon juice to balance.
Step 7
7. Toss pasta in sauce and top with sliced chicken.
